Crispy Hominy with Chili and Lime
Chef Michael Schwartz of Michael’s Genuine Food and Drink (130 N.E. 40th St., Miami, 305/573-5550) created this signature appetizer—which happens to be incredibly addictive.
“I love coming up with creative bar snacks that are a bit more interesting than a simple bowl of peanuts,” he says. “Spicy, salty and crunchy, this fried hominy recipe is the ultimate nibble. The hominy needs to soak for at least 12 hours, so take that into consideration when preparing.”
